Corpus Christi - Rosalie “Rose” Gwen Hofer passed away on January 20, 2021. She was 72.
Rose was born on August 26 1948 in Mt. Vernon, Illinois to Jacqueline Pearl (Johnston) Hofer and James Hershel Hofer. In 1966 Rose married Stephen John Elbert and after a short time they moved St. Louis, Missouri for a brief period before moving to San Diego, California for 10 years, and then moving half an hour north to Escondido, California to raise her children on a quant beautiful farm. In 2004 Rose moved to Corpus Christi, Texas.
Rose received degrees in business, anatomy and kinesiology, and advanced degrees and certifications in Sports Medicine and Teaching. Rose worked as a baker, massage therapist, and as a certified athletic trainer for high schools and colleges in San Diego, California. She also worked with professional teams like the San Diego Chargers and professional golf tournaments. She was renowned for her healing touch. When Rose moved to Texas she worked passionately as a Health Science Instructor and a director for the Texas Health Occupations Students of America association, earning lasting respect from many students and colleagues for always - lovingly - holding them to the highest standards.
In her retirement Rose was passionate about creating beautiful quilts for friends and family as well as giving hundreds of masks she made to keep people safe during the COVID virus outbreak.
She had a zest for life and learning that is awe inspiring. Her focus helped her enjoy and excel in so many passions. Baking, gourmet cooking, canning, farming and gardening. Country line dancing and belly dancing. She was also a Jazzercise instructor, and PTA president at Grace Lutheran Church in Escondido, California. She created beautiful and valuable structures and especially loved quilting. She was an International and domestic traveler. Rosalie Hofer was a well accomplished woman who set the highest standard for all.
Rose was a dedicated and beloved Nana, Mother, Teacher and Friend who created deep, loving relationships wherever she went. She will be missed for her deep and simple love towards family and friends, for helping where she saw a need - her passion for teaching, drawing from her extensive experience spanning time, geography, socio-economics and topics.
Above all Mom instilled in her children and grandchildren and many who met her a deep love of Christ, unconditional love, joy and true grit. She was a dedicated Nana who cultivated beautiful relationships with every grandchild. She always forgave and was there in any crisis. She encouraged her family to take advantage of every opportunity just as she would. No matter the pain she showed the way to find the maximum joy. She fought hard for her family and those in need, she fought to always keep learning, she fought for her students and she fought hard to the end!
She is preceded in death by her sister Janice Elaine Hofer; brother Arthur “Butch” Olin Hofer; parents James and Jaqueline Hofer, and Steven John Elbert,
Survivors include her daughter Jennifer Rose Elbert-Rasmussen of Escondido California; her sons Michael Steven Elbert and Phillip Steven Elbert residing in Corpus Christi; 7 grandchildren: Ian Phillip Elbert, James Michael Elbert, Gabriel Peter Elbert-Rasmussen, Jonathan Michael Elbert, Isaac Phillip Elbert, Ellyanna Rose Elbert-Rasmussen and Evalis (Eva) Rose Elbert-Rasmussen; brother and sister-in-law David and Susan Hofer of Mt. Vernon, Illinois; son-in-law: Lars Peter Rasmussen of Escondido, California: daughters-in-law Caressa Lamae Elbert and Jennie Marie Elbert of Corpus Christi Texas. Isaac Phillip Elbert (Gabriella Flores-Elbert).
